WOOHOOOO! It's the end of the week. Finally it's FRIDAY!
We have only ONE more DAY remaining in our 800g Challenge. We are all feeling better, enjoying more energy, and loving how we feel with the increased vitamins, minerals and fiber with the 800g of fruits and vegetables we are eating every day.
This week's bonus challenge is to eat purple fruits and vegetables. Purple foods are rich in anthocyanins, which are natural plant pigments that provide foods with their fun color. Studies have shown that anthocyanins may benefit brain health, help to lower inflammation, and fight cancer and heart disease. In addition to anthocyanins, purple foods offers other key vitamins and nutrients.
My favorite purple vegetable is eggplant. Eggplant is technically a fruit (Yes! Really! Fruits have seeds and vegetables are the roots, leaves and stems of plants.) Check out this fabulous recipe courtesy of Bon Appetit. Click on the image for the recipe.
