Whole Life Challenge Day 5
This week's Whole Life Challenge weekly lifestyle challenge is to eat vegetables at every meal. Do you eat vegetables at every meal? For most of us, breakfast is the hardest meal to load up with veggies. One easy way to make sure you're getting all of the phytonutrients you need is to make an omelette, frittata, or scrambled eggs with spinach, kale or other dark leafy greens.
Dark leafy greens, especially those in the mustard family or Brassicas, are loaded with anti-inflammatory compounds, powerful antioxidants, fiber, vitamins and minerals. As a general rule, the more bitter the green, the more phytonutrients it contains. The bitterness of greens can often be diminished through cooking, steaming, or eating with a bit of oil and vinegar.
