The Super Heroes of the 4:30pm class. Today's theme is animals, I think Nanook has this one in the bag:-) Are you ready for another CrossFit Open Workout? 
Monday I explored the myth that sweet potatoes are better for you than white potatoes. Sweet potatoes aren't actually "potatoes" at all, but rather they are the tubers from the morning glory family. No, not that morning glory:-) As it turns out, all potatoes are delicious and healthy. 
Papas y Pollo, one of my favorite places to eat in coastal California, serves the most 
AMAZING loaded sweet potatoes. Imagine a perfectly cooked sweet potato smothered in pulled pork or carne asada with all the fresh amazing salsas and guacamole you want. Of course, a local beer from nearby Lagunitas Brewery is the perfect accompaniment. 
I recently came across this recipe from PaleoRunningMama.com that does a decent stand-in for my beloved Papas y Pollo. These Paleo Chili Stuffed Sweet Potatoes pair quite nicely with any of the ales from the 15 breweries in our area, and are an outstanding post-open recovery meal.  Click on the image below for the recipe.
