It's cold and flu season and already many of us at the gym have been afflicted. When we're sick nothing can make us feel better than a warm and lovely bowl of soup. I really love carrot soup because it's so full of wonderful vitamins and minerals. Ginger carrot is my go to, but sometimes I need to break out of my regular spice routine. I love caraway, yet don't use it much outside of making sauerkraut. I'm eager to make this roasted carrot caraway soup from Well Fed this weekend. I'll probably make a double or triple batch and freeze some in gallon freezer bags for later this winter. Enjoy!
